Wet Ingredients
- 3 large eggs
- 2 cups non-dairy milk almond, cashew, or coconut milk work best
- 1/2 cup avocado oil
- 1/4 cup pure maple syrup
- 2 tsp vanilla extract
Dry Ingredients
- 3 cups gluten-free all-purpose 1:1 flour
- 1 tsp salt
- 1/2 tsp ground cinnamon
- 1 tablespoon baking powder
Turn on your waffle iron and let it heat up while you prepare the batter.
In a large mixing bowl, whisk together the eggs, non-dairy milk, avocado oil, maple syrup, and vanilla extract until well combined.
In a separate bowl, mix the gluten-free flour, salt, cinnamon, and baking powder.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix—lumps are okay!
Lightly grease your waffle iron with avocado oil or non-stick spray. Pour about 1/2 to 3/4 cup of batter (depending on the size of your waffle iron) and cook according to the manufacturer’s instructions, usually 3–5 minutes, until golden brown and crispy.
Remove the waffles and serve immediately with your favorite toppings.
